Soba Teishoku

I made my first Japanese (vegan) set meal for Sunday night dinner. Inspired by the yummy meals we ate and miss from Japan and also the servingware we bought to eat it off.
– Edamame
– ‘Mountain’ soba (vegan dashi, soba noodles, enoki and shiitake mushrooms, spring onions)
– Silken tofu with sweet citrus miso
– Rice of course
– Miso soup
– Pickles (sour plum and some green vegetable one) and shichimi togarashi and mixed seaweed sesame seasoning for rice. From the Tokyo Deli, I haven’t got to making these yet.
– Sake! I’m addicted now.

The rather scrawly calligraphy says ‘Ubukeya’ which is the name of the very old business in Tokyo where we bought it.

At dessert I snuck in a mini-slideshow viewing of photos from our trip, but without editing we’ve still got a way to get through all the photos (2000+). Time for another Japanese meal or two!
